You’ll go “nuts” for this week’s recipe!

Everyone has their own food weaknesses… and it’s ok!  As long as you can avoid overindulging, you’re allowed to slip up every once in a while.

Lucky for me, my major food weakness is banana bread (zucchini bread also works).  It’s incredibly easy to make healthy and yummy banana bread!!  This is one of the reasons why I  love this recipe so much – it’s healthy, yummy, and super easy to make.  Try it out, and make sure to eat a slice while it’s warm, covered in melted butter…. mmmmmmmmm…….

Chocolate Chip Banana Nut Bread:

  • 4 over-ripe bananas
  • 1/3 cup melted vegan butter
  • 1 cup vegan sugar
  • 1½ cups all-purpose flour
  • 1½ tsp. Ener-G egg replacer mixed with 2 tbsp. warm water or 1 tbsp. ground flax seeds mixed with 3 tbsp. warm water, both are equal to one egg
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • pinch of salt
  • ¼ cup chopped walnuts
  • ¼ cup mini vegan chocolate chips

1)    Preheat oven to 350°F

2)    Peel the bananas

3)    In a medium sized bowl, smash the bananas until very creamy, leaving few lumps

4)    Mix in melted vegan butter

5)    Mix in sugar, vanilla, and egg replacer

6)    Fold in the dry ingredients, flour, baking soda, and salt. Just until incorporated

7)    Loosely fold in the chopped walnuts and mini chips

8)    Grease  9 x 5 loaf pan. Pour finished mixture into pan and smooth out the top so it is spread evenly

9)    Bake in the oven at 350°F for 50-60 minutes. Test with a toothpick, which should come out clean

10) Allow bread to cool in the pan before turning out

11) To store: wrap the bread in aluminum foil or Ziploc bag, leave at room temperature
