This week’s recipe… “Perfect Pasta Salad”!

This week’s recipe is a yummy one to help us enjoy those vegetables out of the garden during the later summer months.  When I found this recipe, it was actually already called “Perfect Pasta Salad”, but upon reviewing it I must agree… it’s pretty darn close!  This one is totally Veronika approved.

For those who, like me, are NOT fans of cucumbers, try using zucchini instead!  I also would recommend throwing a red or orange pepper in there as well, for colour and more vitamin content  :)


Perfect Pasta Salad:

  • 1 green pepper, chopped
  • 1 package green onions, chopped
  • 1 box cherry tomatoes
  • 2 cucumbers, chopped
  • 16-oz. pasta
  • 1 tsp. prepared mustard
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. parsley flakes
  • 1¼ cup sugar
  • 1¼ cup cider vinegar
  • 2/3 cup vegetable oil

1)    Chop all vegetables and place in a bowl

2)    Cook pasta then drain and cool

3)    Mix all other ingredients together in a separate bowl

4)    After dressing is mixed combine all ingredients, chill, and serve
