Hooray!!  WordPress seems to have decided to start working again, and even if it is only long enough for me to get this week’s healthy recipe posted up here, I call that a win.

So this week, we are going all deep south.  Louisiana-style cooking usually doesn’t fall very high on my list of favourite foods, but this salad may be the exception to that rule.  With spiced beans and a load of yummy vegetables, it’s pretty hard to resist.  Try making a pot, and then eat it with some crusty bread to dip in… and scoop up all that delicious flavour!


Creole Spiced Bean and Vegetable Salad:

  • 2 tbsp. olive oil
  • 1 onion, peeled and thinly sliced
  • Sea salt and black pepper
  • 7 oz. (200 g) green beans , trimmed
  • 2 zucchini, trimmed and sliced into 5/8 of an inch (1.5 cm) circles
  • 8 green onions, trimmed and cut into short lengths
  • 14 oz. (398 g) canned haricot or lima beans, rinsed and drained
  • 14 oz. (398 g) canned cannellini beans, rinsed and drained
  • 14 oz. (398 g) chickpeas, rinsed and drained
  • 8 oz. (1 cup) cherry tomatoes, halved
  • Bunch of Italian parsley, leaves only, roughly chopped
  • Bunch of cilantro, leaves only, roughly chopped

For the Creole spice mix:

  • 1½ tsp. sweet paprika
  • 1½ tsp. dried basil
  • 1½ tsp. dried thyme
  • Pinch of cayenne pepper, or to taste
  • Pinch of chili powder, or to taste

1)     Heat the olive oil in a pan and add the onion with some salt and pepper.  Stir frequently over medium heat for 6 to 8 minutes, until the onion is soft

2)     Meanwhile, combine the ingredients for the Creole spice mix in a small bowl.  Add to the pan and stir for another minute or two until fragrant

3)     Tip the green beans, zucchini and green onions into the pan and cook for 6 to 8 minutes or until tender.  Turn off the heat, add the canned beans and chickpeas along with the cherry tomatoes and toss to mix

4)     Transfer the salad to a large bowl and stir in the chopped parsley and cilantro.  Serve slightly warm or at room temperature
